Kombucha – say what?

Kombu…. what???
Kombucha is sweet tea that’s been transformed by fermentation into a nutritionally rich drink full of probiotics to help your tummy feel yummy. Additionally, Kombucha is believed to boost the immune system, aid joint health, detoxify your liver, and helps your body to find balance.

What’s certain is that kombucha has been around for a long, long time. Kombucha is said to have originated over 2,000 years ago, either in China or Japan. When you drink it, you’re taking part in a tradition that has been around for millennia.

Sounds good, but… What’s in it?
At its most basic, Kombucha is made with tea, sugar, and a SCOBY (Symbiotic Colony of Bacteria and Yeast) that ferments the tea and gives Kombucha its many health benefits. Though Kombucha is sometimes called “mushroom tea,” there’s actually no mushrooms involved!

Cha Mama Kombucha is made with organic, locally sourced ingredients. Our flavored Kombucha is made with fruits or herbs that are available seasonally in Chiang Mai.

Whoa, whoa, whoa…. there’s sugar in my Cha Mama? 
Can’t you use something like honey or stevia instead?
Well, sugar is what the SCOBY feeds on to ferment the tea. It eats the sugar to produce more and more beautiful yeast and probiotics. So by the time kombucha is reading for drinking, there’s a minimal amount of sugar, if any, left in your tea. We use sugar as opposed to other sweetners, because it helps the kombucha retain a healthy pH that’s safe for your body to drink.
